Try This: Quinoa Loaf

Give This Recipe a Try. It May Be Vegan Friendly, but Meat Eaters Will Enjoy It Too.

Here lately I have been making it a point to try new foods and recipes; especially vegan friendly recipes.

My goal is center my nutrition around whole, natural, unprocessed, plant based foods. This will ensure that I get lots of vitamins, minerals, antioxidants, fiber, and other good-for-you-stuff.

So, my first recipe this week was from the Whole Foods website: Quinoa Loaf with Mushrooms and Peas.

It may sound strange, but it was very good. It does take a little preparation, but it was well worth it.

Ingredients:

  • 1 tablespoon extra virgin olive oil
  • 8 ounces button mushrooms, sliced
  • Salt and black pepper, to taste
  • 1 (15 ounce) can no-salt-added garbanzo beans, rinsed and drained
  • 3/4 cup rolled oats
  • 2 cups cooked quinoa
  • 1 cup frozen peas (I used a little more)
  • 1/2 cup chopped fresh parsley
  • 10 sundried tomatoes, drained and chopped
  • 1 cup (about 1 onion) chopped red onion

Preheat oven to 350 degrees. Lightly grease an 8 inch loaf pan with oil. Heat oil in a large skillet over medium-high heat. Add mushrooms, salt and pepper and cook, stirring occasionally, until mushrooms are golden brown, about 6 to 8 minutes.

Put beans, oats, and 1/2 cup water into a food processor and pulse until almost smooth. In a large bowl, combine mushrooms, bean mixture, quinoa, peas, parsley, tomatoes, onion, salt and pepper. Transfer mixture to prepared loaf pan, gently pressing down and mounding it in the middle. Bake until firm and golden brown, 1 to 1 1/4 hours. Set aside and let rest for 10 minutes before slicing and serving.

I should note that I also added some chopped garlic into the mix because, well, I love garlic.

Once it was time to serve it up, we served spicy brown mustard on the side. It may sound like a strange addition, but it was very good. The next day we put some hot sauce on it, and that was very good as well.

Sounds good! Just trying to figure out what I would serve it with or is it a good meal by itself?

Laura-

We ate it along side some grapes, but we usually put strange foods together anyway. ; )

The Whole Foods website said you could also put it on a whole wheat bun and eat it as a "veggie burger". We never tried that . . .

Whenever I make this next time, I probably serve a salad with mixed greens and a homemade vinegrete along side.
